All-In-One Crockpot Creamy Chicken, Spinach & Artichoke Pasta
So. good.
Recipe:
In the crockpot on high:
3 pounds chicken breasts
2 cups diced onions
3 tablespoons olive oil
1 teaspoon salt (½ underneath, ½ ontop chicken)
½ teaspoon pepper (¼ underneath, ¼ ontop chicken)
1 12 oz bag frozen spinach
2 tablespoons chopped garlic
8 oz cream cheese
1 cup mayo
¼ teaspoon red pepper flakes (optional)
½ teaspoon garlic powder
½ teaspoon onion powder
1 tablespoon dried chives (optional)
Three hours later…
Shred chicken into big pieces
Then add in:
13 oz can of quartered artichoke hearts
2 cups chicken stock
1 pound pasta of choice
1 ½ cup fresh shredded parmesan
1 cup shredded mozzarella
Mix and cook on high for 45 more minutes (or until pasta is cooked)
Top with additional cup mozzarella, once it is melty, serve and enjoy!
