Baked Meatballs & Loaded Slow Cook Potatoes
We wanted to try meatballs that weren't in a marinara sauce, because we were in the mood for mashed potatoes. These are basically meatloaf meatballs. They're really good and flavorful.

Meatballs:
2.5 (approx.) pounds ground beef
½ cup breadcrumbs
¾ cup tomato sauce or marinara
3 eggs, lightly beaten
1 onion, finely chopped
2 clove garlic, grated
3 teaspoon dried parsley
¼ teaspoon thyme
¼ teaspoon dried rosemary
1 teaspoon Kosher salt
½ teaspoon freshly ground pepper
1 tablespoon chicken base
Combine everything, form into 2 inch balls, bake on baking pan at 375 for approximately 45 min. (Until center of ball reads 160°)
Loaded potatoes
2 lbs red or white potatoes peeled and chopped into big chunks
4 tablespoon butter
1 stick cream cheese
1 teaspoon salt
1 tsp pepper
1-2 tablespoon dried chives
Crock pot on high for 4-5 hours until fork tender. Give it a mix half way through.
• Serve with a sprinkle of bacon alongside your meatballs and your favorite steamed veggie.
