Buttery Shortbread Cookie


I have loved these cookies ever since my mother introduced me to them when I was young! If you have never had a shortbread cookie, then you have been missing out! They are buttery, sweet and a bit salty, and my family likes them topped with some chocolate because they love chocolate. The combination is amazing and addictive.

Recipe:


Ingredients:

  • ¾ lbs butter at room temperature 

  • 1 cup sugar, plus more for sprinkling

  • 1 teaspoon vanilla extract 

  • ¼ teaspoon kosher salt

  • 3 1/2 cups all-purpose flour

  • 6 to 7 oz semisweet chocolate 


  • Using your mixer's pallet attachment, mix together the butter and 1 cup of sugar until they are combined then add the vanilla.

  • In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together.

  • Dump onto a surface dusted with flour and shape into a flat disk.

  • Wrap in plastic and chill for 30 minutes.

  • Cookie cutter or with a pizza, roller or knife into one by 3 inch rectangles.

  • Place the cookies on an ungreased baking sheet and sprinkle with sugar.

  • Bake for 20 to 25 minutes until the edges begin to brown.

  • Allow to cool to room temperature.
