Buttery Shortbread Cookie
I have loved these cookies ever since my mother introduced me to them when I was young! If you have never had a shortbread cookie, then you have been missing out! They are buttery, sweet and a bit salty, and my family likes them topped with some chocolate because they love chocolate. The combination is amazing and addictive.

Ingredients:
¾ lbs butter at room temperature
1 cup sugar, plus more for sprinkling
1 teaspoon vanilla extract
¼ teaspoon kosher salt
3 1/2 cups all-purpose flour
6 to 7 oz semisweet chocolate
Using your mixer's pallet attachment, mix together the butter and 1 cup of sugar until they are combined then add the vanilla.
In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together.
Dump onto a surface dusted with flour and shape into a flat disk.
Wrap in plastic and chill for 30 minutes.
preheat the oven to 350°
Roll the dough 1/2-inch thick and cut with a
Cookie cutter or with a pizza, roller or knife into one by 3 inch rectangles.
Place the cookies on an ungreased baking sheet and sprinkle with sugar.
Bake for 20 to 25 minutes until the edges begin to brown.
Allow to cool to room temperature.
