Chicken, Ham, Broccoli & Rice Bake


We had leftover chicken and ham from the weekend, but you can use rotisserie chicken and any store-bought ham. 

This is a meal in a pot! It’s super easy and only uses one cooking pot! 


Ingredients:


6 cups rotisserie chicken 

1 lb cooked ham diced

6 cups roughly chopped fresh broccoli

3 cups chicken stock 

2 tablespoons olive oil

1 cup Chardonnay

1 diced white or yellow onion

1 tablespoon chicken base

1 can of cream of mushroom soup

2 cups of white rice

¼ teaspoon red pepper flakes

1 teaspoon kosher salt


Directions:


  • In a Dutch oven, sauté, diced onions, and olive oil until translucent.

  • Then add chicken, ham, broccoli, water, chardonnay, bouillon, cream of mushroom, red pepper flakes until lightly boiling. 

  • Add in rice and mix thoroughly

  • Put lid on and pop in a 375° oven to bake for 45-60 minutes or until rice is cooked.


Give it a good mix/fluffing and enjoy with some bread and butter.
