Crockpot Chicken Tortilla Soup
Recipe:
In crockpot on high:
3 cups shredded taco chicken (mine was frozen)
2 teaspoons olive oil
1 onion diced
1 red pepper diced
1 yellow pepper diced
1 can kidney beans
4 cups chicken stock
1 lemon sliced, seeds removed
5 whole cloves garlic
Spices:
1 teaspoon granulated onion
½ teaspoon oregano
½ teaspoon parsley
1 teaspoon cumin
1 teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon chili powder
½ teaspoon salt
¼ teaspoon red pepper flakes
½ teaspoon chicken base
5 hours later, serve with tortilla chips, sour cream, green onion and cilantro (optional)
