Chocolate Chip Cookie Cake with Buttercream Frosting
This cake is pretty easy to make! It's definitely for those who love sweet and chocolate!
Recipe:
Ingredients:
¾ cup butter
1 cup brown sugar
1 egg + 1 yolk
2 teaspoons vanilla extract
2 cups (250g) all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking soda
½ teaspoon salt (only if you used unsalted butter)
1-¼ cup chocolate chips
Frosting:
½ cup butter
1-¼ cup powdered sugar
¼ cup cocoa powder
1-½ tablespoons heavy cream or milk
Dash of salt (if you used unsalted butter)
1 teaspoon vanilla extract
Directions:
In a large bowl, beat butter on medium speed until completely smooth and creamy (approx 1 minute).
Add the brown sugar and beat on medium speed until creamy (approx 1 minute).
Mix in egg, yolk, and vanilla on medium-high until combined (scrape sides as needed).
In a separate bowl, combine flour, cornstarch, baking soda, and salt.
On low speed, slowly mix dry ingredients into wet ingredients until combined. Dough will be thick.
Add chocolate chips and mix for 5 seconds
Press dough into a well-greased 9” round baking pan.
Bake at 350° for 20-25+ minutes.
Frosting directions:
With a hand-held mixer, beat the butter on medium speed until creamed (approx 2 min).
Add powdered sugar, cocoa powder, cream, vanilla, and salt. Beat until fluffy.
Add sugar or milk if needed to reach desired thickness.
Pipe or spread frosting on cooled cookie.
