Classic Cinnamon King Cake
This is my husband's first time, making a King Cake in all of our years and it was so good! It was a Best King's cake I have ever had.

Ingredients:
Dough:
635 grams bread flour
250 ml milk, warmed 95°
1 egg, gently beaten
125 ml water, warmed 95°
57 grams butter, room temperature
¼ cup honey
1½ teaspoons salt
1 teaspoon cinnamon
2 teaspoons yeast
⅛ teaspoon nutmeg, freshly grated if possible
Cinnamon sugar mix:
½ stick butter, melted
¼ cup sugar
½ cup brown sugar
1½ tablespoons cinnamon
1 cup confectioner sugar (or more to sweetness preference)
3¾ tablespoons room temperature milk
1½ tablespoon room temperature butter
Icing:
1½ tablespoon corn syrup or honey
⅛ teaspoon salt
½ teaspoon vanilla extract
Purple, green, yellow sprinkles
Instructions:
To make the cake, mix bread flour, salt, cinnamon, and grated nutmeg in a bowl. Stir well, and add yeast.
Add butter into warm milk and stir until butter melted. Pour in water, lightly beaten egg, and honey into the mixture.
Combine wet and dry ingredients in stand-mixer with paddle attachment until mixed and dough forms. I’m Switch attachment to a dough hook and knead the dough for around ten minutes on medium speed until it is smooth.
Move dough into a large, lightly oiled bowl. Cover bowl and let it rise for one to two hours in a warm spot until it doubles in volume.
Once dough has doubled in size, roll and shape it on a floured surface to form a 10 x 12 inch rectangle.
Brush dough with melted butter and coat with cinnamon sugar mixture leaving the outer ½” clear from filling. Gently pat the filling so that it sticks to the dough.
Roll the dough to form a log, slightly flatten, and then divide flattened dough into three strips with a pizza cutter.
Braid the three strips and pinch both ends to form an oval.
Move it onto a baking pan lined with parchment paper or silicon.
Let the dough rise for another one or two hours.
Preheat the oven to 400º, and bake 18-20 minutes. Let it cool completely.
Icing:
Heat butter, milk, and honey or corn syrup until warm. Remove from heat then add sugar, vanilla extract, and salt. Mix until reaching pourable consistency.
Pour icing on top of cooled bread then spread sprinkles before icing is set in patterns of purple, green and yellow.
