Creamy Barbecue Chicken Pasta
My family destroyed this. No leftovers.
This only took about 25 minutes to make because my husband pre-barbecued a bunch of chicken for me this week.
Here's the recipe:
Boil 1 pound of pasta as per the package
directions (we did bowtie)
Sauce ingredients:
1 tablespoon butter.
2 tablespoons olive oil
1-2 tablespoons chopped fresh garlic
1 ½ cups chopped green onions
3 cups fresh finely chopped spinach
1 large pinch of salt and pepper
8 oz cream cheese
3 cups chopped or shredded barbecue chicken breasts (I had my husband barbecue and bunch ahead of time)
2 full ladles of pasta water
Simmer on low for 10 minutes stirring often
Mix pasta and sauce togther.
Top with fresh parsley (optional)
