Creamy Pumpkin, Ground Turkey & Sage Bowtie Pasta


Recipe:


12 ounces ziti or rigatoni noodles, cooked to al dente

1 pound ground turkey

2 onions, diced

3 cloves garlic, minced

1 bay leaf

1/2 tsp dried thyme

1/2 tsp ground sage

1/2 teaspoon nutmeg

1/4 teaspoon red pepper flakes

pinch of cinnamon

1 cup dry white wine

1 cup heavy cream

1 cup chicken stock

15 oz can pumpkin puree

salt and pepper to taste

1 cup finely grated Parmesan cheese


Instructions:

  • Preheat the oven to 350°

  • Brown the turkey over medium heat with some olive oil, salt and pepper.

  • Transfer to a bowl and reserve.

  • Add the onion, garlic, and bay leaf. Cook until the onion is translucent, Add spices

  • Cook one more minute.

  • Add the wine and cook until reduced by half. The heat should remain to medium high.

  • Add the stock, stir in the pumpkin puree.

  • Mix until everything is incorporated.

  • Stir in the turkey and heavy cream.

  • Top with parmesan.

  • Bake for 25-30 minutes
