Crisp & Creamy Cucumber Salad
I took my direction from Ina Garten's Cucumber Salad. Mine is seedless, with dried dill and uses less dressing.
Recipe:
5 cucumbers seeds removed & sliced
1 red onion thinly sliced in quarters
1 cup low fat or fat free plain Greek Yogurt
1 cup sour cream
2 teaspoons salt
1 teaspoon dried dill
1 teaspoon pepper
Directions:
• In a bowl combine sliced cucumbers, red onion and 2 teaspoons salt
• Return to a paper towel-lined strainer over a bowl, sealed in the fridge overnight to pull out excess moisture.
• Next morning:
• Drain & pat dry cucumbers
• Combine with 1 cup low fat or fat free plain Greek Yogurt, sour cream, dill & pepper. Salt to taste
• Refrigerate for a while to let all of the flavors set.
