Crockpot Chicken & Veggie Tikka Masala
I saw a jar of "Tikka Masala Simmer Sauce - tomato based with ginger and coriander" it was extremely well-priced and seemed like a great starting point. I had some chicken thighs in the freezer and all of the veggies, I went with it. It smells fantastic.
Recipe: (crockpot on low 8 hours)
2 pounds chicken thighs (mine were frozen!) or breasts
15 ounces tikka masala simmering sauce
1 yellow onion, roughly sliced
1 orange bell pepper, roughly sliced
2 cups baby carrots
1 cup baby tomatoes
2 to 3 tablespoons olive oil
1 teaspoon chicken base
5 cloves of garlic, sliced
Crockpot on low 8 hours.
Serve over rice
