Easy Chicken & Zucchini "Risotto"


So easy, sounds fancy and tastes fancy but is done in about 40 mins total. Follow the directions below, in order, and you will thank me! 

Ingredients in order:


In a Dutch Oven saute on low for about 5-7 minutes:

1 tablespoon olive oil

1 red onion, diced

1 one package of cherry tomatoes

2 tablespoons chopped garlic

1 tablespoon kosher salt


Then add in and sauté, for about 5 more minutes:

1 pound chicken breasts, sliced 


Then add in:

1 cup white rice

2 cups chicken stock

6 ounce jar of pesto


Bring to a boil, then reduce to medium heat and cover for 20 minutes (stirring occasionally to keep the rice from sticking to the bottom!) 


Then stir in:

¼ cup parmesan 

½ cup cream 


And top with a layer of:

1 zucchini, sliced

¼ cup parmesan


Place under 400° broiler for

15 minutes to brown the parmesan and zucchini


Remove from the oven, cover for an additional 5-10 minutes to cool a bit and then serve in a bowl with a hearty bread. Yum!
