Easy Jambalaya
Recipe:
7 cups of water
4 tablespoons olive oil
20 oz Zataran's or Jambalaya girl Jambalaya mix
1/2 cup uncooked rice
1 tablespoon fresh, chopped garlic
1 bell pepper diced
2 white or yellow onions diced
26 oz sausage (andouille is most common but we just use whatever is on sale!)
1.5 lbs chicken breast diced
In a large dutch oven sauté diced chicken in olive oil until cooked through.
Remove chicken (set aside)
add onions, bell peppers and garlic and sauté until translucent.
add sausage, cooked chicken, jambalaya mix, extra rice & 7 cups of water - combine throughly.
Pop the lid on and bake in the oven at 350° for 45-60 minutes.
