Easy Peasy Crock Pot French Onion Chicken
This recipe started out as one thing and ended up as another! It turns out that the green chilies give the sauce the tang that you get with French onion soup without the Sherry that it usually has in it. Using the boneless-skinless chicken thighs and the herbs gives it the depth of flavor. And of course whole milk mozzarella is melty heaven! And as we always love, this one was easy, slow cooker, magic!
Recipe:
Place in layers in your crockpot:
1-2 tablespoons olive oil
2 red onions, thinly sliced
½ of the seasoning mix (see below)
3 pounds boneless skinless chicken breast
The other half of the seasoning mix
4 oz canned diced green chilies (these give it some tang)
1 cup chicken broth
Seasoning mix:
Combine:
1 tablespoon each: salt & dried chopped chives
1 teaspoon each: granulated onion, paprika, ground cumin, dried parsley, flakes, Badilla complete seasoning and garlic powder
½ teaspoon each: chili powder, whole oregano, & thyme
In the crockpot on high for 2-3 hours
Then stir in a slurry of 2 teaspoons cornstarch & ¼ cup water.
Top with 1-2 cups shredded whole milk mozzarella.
Serve over cooked pasta or rice of choice
