Jerk Pork Flatbread Tacos with Lemon Garlic Aioli!
Inspiration for this meal came from:
1) I found a big old pork roast on sale
2) Rub of Love ❤️ Jerk Spice Rub
3) Rub of Love ❤️ Veggie Mix
Everything in this was delicious, including the flatbread that my husband made from scratch. The pork was tender and flavorful with a nice kick from the seasoning. But what really brought it together was the aioli! It was also really easy!!
Here's the recipe...I hope you enjoy it.
Recipe
3-4 lb boneless pork loin roast
3 tablespoons olive oil
1 tablespoon Rub with Love ❤️ Jerk Spice Rub
(More if you like it spicy!)
8oz pinapple chunks
1 cup chicken broth
6 garlic cloves, chopped
2-3 green onions diced
1 lime, juiced
On high for 3-4 hours then shred
Aioli sauce:
2 tablespoons mayonnaise
2 tablespoons sour cream
1 lemon juiced
1 teaspoon “Rub of Love ❤️ Veggie Rub”
½ teaspoon grated garlic
Serve with sliced bell peppers, tomatoes & green onions on warm tortillas or flatbread!
