Lower Carb Cauliflower  “Chicken Fried Rice”



Lower Carb Veggie Cauliflower "Chicken Fried Rice"


We are on a mission to get more veggies in our lives!  Using the @rubwithlove seasoning mix saved time and was delicious! You can find the bags of "Frozen Vegetable Medly with Riced Cauliflower" in your grocer's freezer section.


I dare you to not end up liking this just as much, if not more than regular fried rice!

Recipe:


In a big pan sauté on medium high heat:

1 tablespoon sesame oil

30 oz. riced veggies cauliflower medley

1 teaspoon “Rub with Love ❤️ Chinese 12 Spice Rub”

2 cloves of garlic, chopped

2 cups diced chicken thighs or breasts

½ of the “fried rice sauce” (recipe below)


After about 10 minutes of cooking add in:

3 eggs,  scrambled

(You can scramble them separately, or scoot the veggie mixture to one side of the pan and scramble them on the other side)


Lastly, add in the second half of the “fried rice sauce” and continue sautéing until the liquid is absorbed.

Combine in a jar you can shake:

⅓ cup soy sauce

¼ cup sesame oil

¼ cup oyster sauce

¼ cup chardonnay (or mirin)

1 teaspoon “Rub with Love ❤️ Chinese 12 Spice Rub”

Shake like crazy!
