Mexi-terranean Chopped Salad! A little Mexican, a little mediterranean, a lot delicious! Delicious by itself, as a salsa and even better the next day. We put it on our chicken tacos with some queso fresco too!

Chop up:
1 yellow bell pepper
1 red bell pepper
1 red onion
1 bunch of green onions
1 10 oz package grape tomatoes
1 avocado
Add in:
1 can sweet corn, drained
1 can kidney beans, rinsed
Lemon Garlic VinaigrettE
Recipe:
Whisk up:
½ cup olive oil
2 lemons, juiced (¼ cup)
1 tablespoon dijon mustard
2 cloves garlic, grated
¼ teaspoon kosher salt
¼ teaspoon pepper
⅛ teaspoon red pepper flakes
1 tablespoon fresh parsley finely chopped
Toss it all and enjoy!
