Mexican Chicken Tortellini
(Crock pot)
Recipe:
1-2 pounds chicken breast
1 can cream of mushroom soup
½ teaspoon red pepper flakes
1 cup green onions
1 red bell pepper diced
1 tablespoon chicken base
1 packet taco seasoning mix
½ cup lemon juice
1 can sweet corn, drained
Crockpot in high for 2 ½ hours
Remove and lightly shred chicken leaving medium pieces
Return to crockpot
Mix in 3 cups fresh cheese tortellini
Top with 2 cups shredded cheddar cheese
Cover and let cook on high for 10 more minutes.
Top with a dollop of sour cream and some chives.
