Mexican Street Corn Salsa

Mexican street corn salsa

All of the flavors of street corn in a salsa dip!

I think it would be good with canned corn too, just not as authentic tasting.

Recipe:

(Might need to double this recipe)

2 roasted corn cobs (cut off the corn kernals)

The juice of one lime

1/8 teaspoon black pepper

1/8 teaspoon chili powder

1/4 teaspoon kosher salt

1/4 teaspoon dried cilantro

2 green onions diced

2 tablespoons crumbled cojita cheese

Mix it all together and enjoy witb some tortilla chips!
