Midnight Baked Chicken Mac-n-Cheese


My boys are runners and sometimes get home late from track meets and are not interested in a salad. They need comfort food so I  threw this together late last night for them. 


Don’t be afraid to be creative! Good food from scratch gets easier the more you do it.


Here’s what I had ready to go:

  • leftover shredded chicken taco meat (the recipe is at southernkelleliving.com)

  • ½ bag of already boiled egg noodles (so ½ lb when uncooked)

  • Shredded parm, cheddar, queso fresco, milk & cream 

  • Butter and flour to make a quick roux



Here’s how to make the sauce:


In a saucepan combine until golden:

2 tablespoons butter

1-2 tablespoons flour


Slowly whisk in until smooth and thickened:

1 cup lowfat milk

½ cup heavy cream

½ cup grated parmesan

1-2 cups shredded cheddar


Add in cooked noodles, pour into a medium baking dish, top with about 1 cup shredded chicken and a little more cheese (I had a little more parmesan and some queso fresco but any cheese will work) 


Pop in the oven and bake at 350° until bubbty (approx. 30 mins)
