One Pan - Baked Taco Chicken & Yellow Rice
Ingredients:
2 tablespoons olive oil
2 lbs chicken thighs
1 cup salsa
1 package taco seasoning
1 lemon
1 package yellow rice mix (We used 8oz Jambalaya girl yellow rice mix)
1/2 cup white rice
2 cups green onions
Directions:
Preheat oven to 350°
In a baking dish layer:
Olive oil
Chicken thighs (skin side up)
Salsa
Lemon juice
Top with taco seasoning
Bake uncovered for 30 minutes then cover and bake for 30 minutes more at 200°
Add in (in between the thighs)
Yellow rice mix
White rice
1 cup of chicken stock
Top with 2 cups sliced green onions
Cover and put back in the oven at 350° for 30 more minutes or until rice is tender.
