One Pot Breakfast Bake!
This is basically a savory bread pudding. You can add anything that you would put in a quiche or whatever you have on hand in your fridge. We used to make giant ones in our cafe with the unsold bread (which actually was glutenfree!) It works great for crowds, brunch or can be made ahead of time for your family to heat up for a quick breakfast during the week.

Recipe:
12 eggs
1 cup heavy cream
2 cups mozzarella
2 cups cheddar
1 t teaspoon each kosher salt, black pepper & paprika
1 tablespoon butter
½ diced white onion
3 cups diced toast (needs to be dried out a bit or the bread will be mushy)
Options to mix in:
1 cup chopped broccoli
2 cups fresh spinach leaves
1 diced tomato
Diced greed onions
Cooked bacon
Diced ham
Basically anything you’d put in a quiche!
Mix everything together and pop in the oven for 30-40 minutes at 350°
