One Pot Chicken and Sausage Pastalaya
I had not heard of pastalaya until I actually moved to the New Orleans area. With my born-and-raised in New Orleans husband, I had only heard of jambalaya. Needless to say, my kids were thrilled that there was now a pasta version of jambalaya. All three of them love jambalaya, red beans & rice, and gumbo.
This is my first attempt at Pastalaya. I used the “@JambalayaGirl” package of seasoning, and then added my own twist!
And of course my LSU @Preaupots dutch oven because, it just makes all of my regional New Orleans recipes taste better.
Recipe:
In a dutch oven sautée
2 tablespoon olive oil
1 one yellow onion, diced
1 chicken breast, diced
1 lb smoked sausage
1 bell pepper, diced
When cooked add:
1 stick of cream cheese
5 cups of water
¾ cup chardonnay (optional - add an extra ¾ cup water if you don't use the wine)
1 teaspoon chicken base
Bring to a boil
Add 1 lb Pasta (we used bowtie)
Reduce heat and simmer on low, covered for 25 minutes or until tender.
Remove from heat and let stand with lid on for 5 minutes
Top with sliced green onions (optional)
