Party Beef Roast
Ingredients:
3-5 pound roast (we used a shoulder roast)
1 white onion, sliced
2 cups carrots
1 cup chicken broth
1 tablespoon herbs to Provence
6 or more cloves of garlic
2 tablespoons kosher salt
2 teaspoons black pepper
Instructions:
Sear roast, coated generously with salt and pepper on both sides in a cast iron pan.
Place in crockpot on high with half of the onions and carrots on the bottom and half of the onions and carrots on top.
Use the one cup of chicken broth to clean the good bits out of the pan, and then pour over the roast in the crockpot.
Top with Herbs du Provence then slow cook on high for about five hours. Then turn it down to low for the remaining hours.
Serve with our famous mashed potato recipe and some simple peas.
