Crock pot on high
4-5 lbs potatoes diced (with skin on)
1 teaspoon kosher salt
1 teaspoon pepper
3 tablespoons butter
1 cup chicken broth
1 teaspoon onion powder
1 tablespoon freeze dried chives
⅛ teaspoon red pepper flakes
After 3 hours add:
1 cup Sour Cream
1 cup shredded Parmesan
2 cup shredded cheddar cheese
1 cup shredded Mozzarella
When the potatoes are soft and the cheese is all melty enjoy!
