Penne Chicken Alfredo with Bacon and Peas
This is delicious. What helped it go fast was that I had my husband grill a bunch of chicken breasts and bacon yesterday. That saved time.
We've decided that we're going to start doing that every week! That way I have chicken to add to dinners more easily.
This Alfredo recipe is a little different than my usual one because I wanted it to be a little creamier so I used cream cheese instead of the usual amounts of butter and cream.

Recipe:
1 lb Penne prepared according to package
(Reserve one cup of pasta water for sauce)
In a large sauté pan add in order:
2 tablespoons butter
1 tablespoon olive oil
1 yellow onion, diced
½ teaspoon Kosher salt
¼ teaspoon pepper
¼ teaspoon red pepper flakes
1 tablespoon chicken base
1 cup pasta water
8oz package of cream cheese
12 oz frozen peas
Stir until cream cheese has melted and combined, then add in:
4 cups cooked chicken breasts (can also use rotisserie chicken)
1 cup cooked, crumbled bacon
1 cup dry white wine
2 cups grated parmesan (reserving 1 cup to top)
Simmer on the stove until everything is melty and lovely. Then combine thoroughly with cooked penne and top with remaining parmesan.
