Quick Rustic Vodka Sauce
(with cheese tortellini)
This rustic recipe is a combination of a bunch of recipes. If you want a smoother version use crushed tomatoes instead. It makes about 5-7 servings (depending on serving size obviously!)
Recipe:
Simmer:
2 x 14.5 oz can of diced tomatoes
2 tablespoons tomato paste
1 tablespoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
¼ kosher salt
¼ teaspoon black pepper
⅛ teaspoon red pepper flakes
1 tablespoon olive oil
¼ cup bacon crumbled
¼ cup vodka
½ teaspoon grated fresh garlic
Simmer until tomatoes break down (approx. 20-30 mins)
Then add in:
¾ cup heavy cream
½ cup grated parmesan
1 cup shredded mozzarella (to top with before serving)
1 pound of your favorite pasta, cooked to package directions.
Combine pasta and sauce thoroughly, top with mozzarella and enjoy!!
