Restaurant Caesar Salad, and Dressing

Restaurant Caesar Salads always taste the best, no? It's because they have homemade, from scratch dressing.



And, yet again, it's not that hard to make it from scratch - just follow this recipe you will not be disappointed.

Have I mentioned that totally worth it to make it from scratch? Life is too short to not have excellent Caesar salad.

Recipe


1 to 2 heads of Romain lettuce, cleaned and chopped.

1 to 2 cups really good quality croutons

One cup shaved parmesan (to top the salad!)


Recipe (Ceasar Salad Dressing)

Ingredients:

3 large egg yolks

2 garlic cloves

2 tablespoons anchovy paste

2 tablespoons lemon juice

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

¼ teaspoon kosher salt

¼ teaspoon pepper

Dash hot sauce

½ cup olive oil

¼ cup grated Parmesan cheese

Blend the first 10 ingredients together in a blender until well blended.

While processing, slowly drizzle the olive oil in a steady stream until blended. Stir in Parmesan cheese.

Chill until ready to serve.


Toss with lettuce, shaved parmesan, pepper & croutons
