Sundried Tomato “Pesto”
In a food processor
2 cups sun-dried tomatoes
1 cup olive oil
8 garlic cloves, peeled
4 green onions
3 tablespoons of almonds
¼ cup canned diced tomatoes
1 teaspoon dried parsley
1 ½ teaspoons salt
½ teaspoon red pepper flakes
½ teaspoon oregano
¼ teaspoon pepper
1 cup parmesan
Blend until smooth
