Shredded Beef taquitos


Yum. I just ate these and as I told my niece, "I just ate them and now am certain I have lived a complete life!" 😂🤣

Recipe:


In the crockpot:

3 pounds boneless sirloin tip roast divided into smaller pices (to cook faster) 

1/2 cup salsa rojo

1 16oz jar of roasted red bell peppers (liquid drained)

1 packet enchilada sauce mix

1 packet taco seasoning

1 head of garlic, peeled


Crockpot on high for 8 hours until meat shreds easily. Remove meat from crockpot and shred.  


To make taquitos:


1 package taco flour tortillas

1-2 cups shredded mozzarella

1-2 cups shredded cheddar

vegetable oil.


Roll with a layer of cheese and a layer of beef filling and secure with a toothpick.


Fry in small batches at 350° until dark golden brown. Remove toothpick before serving.


Serve with creamy salsa:

Combine:

½ cup sour cream

¼ cup salsa

lemon juice to taste.
