Slow Cooker Chicken Cacciatore

Recipe;


1-2 lbs boneless skinless chicken breast (or chicken thighs)

2 15oz cans chopped tomatoes

1 white onion chopped

3 cloves garlic chopped

3 T sun dried tomato pesto

1/2 tsp oregano

1/2 tsp thyme

1 T salt

1 tsp black pepper

1 tsp chicken base

1/2 cup red wine

2 T olive oil

1 small package baby Portabella mushrooms sliced

Add all ingredients except mushrooms to crock pot. Cook on high for 3 hours, add mushrooms, then cook on high for 2 more hours making sure the chicken is cookes thoroughly.

You can add 2 T corn starch (if you want thicker sauce)


Serve over your favorite pasta & enjoy!
