Southern Fried Chicken Breast Sliders
To make the chicken:
4 large chicken breasts, sliced into 8 thin pieces (I ended up slicing them into chicken strips also for faster cooking)
soak them in a mixture of:
2 cups milk
¼ cup lemon juice
For 1-6 hours (refrigerate!)
To fry:
Heat 2-3 inches of oil (we used peanut oil) to 350°
In one shallow bowl mix:
2 eggs
2 tablespoons hot sauce
In a separate bowl mix:
2 cups all-purpose flour
2 teaspoons salt
1 teaspoon pepper
1 teaspoon paprika
1 teaspoon thyme
1 teaspoon garlic powder
1 teaspoon white pepper
1/2 teaspoon cayenne pepper
Using a fork, dip the chicken into the egg mix, back to the flower mix, then back to the egg mix and finally the second coat of the flower mixture.
Gently place the chicken into the 350°, oil and fry until golden. Internal temp should be at least 160°
Serve with your favorite bread or slider rolls. My husband made us fresh ones just for this dinner!
I topped mine with a smear of ranch and barbecue sauce, plus some flat leaf parsley. Arugula and pickled red onions would be delicious to!
