Curry Chicken Salad


Our friends and family have been begging for this recipe ever since we owned our café and bakery. We didn't let them have it. It was like having a magic recipe that we, selfishly, didn't want to share.


It is time. 


If there ever was an addictive salad on this planet, it's this. It is so flavorful with the mixture of slightly sweet and savory, and the mix of textures.


 You can serve it in a wrap, or in a melty Panini, add a scoop to the top of your green salad, or just grab a fork and eat it from the bowl.


You may think that 5 pounds of chicken is a lot, and feel free to reduce the recipe, but just know that you will regret not making more. 


I hope you enjoy it as much as I know you will because everybody does!!


Recipe:


Bake at 375° until internal temperature reaches 165°:


5 lbs boneless, skinless chicken breasts

½  cup Bengal Masala rub (https://amzn.to/3F36CHD) ⬅️ there's the link to buy some!)

  • Cool chicken until the internal temperature is below 45 degrees. 

  • Dice chicken into ½” cubes.


Mix the diced chicken with the following ingredients:


½ onion diced 

3-4 celery stalks cut to 1/4” slices

½ cup mango chutney (or peach)

2 tablespoons dried parsley

2 tablespoons onion powder

2 tablespoon curry powder

1 ¾ tablespoons paprika

2 tablespoons Montreal steak seasoning

2-3 cups mayonnaise (depending on how you like it)


Make sure to seal it airtight in a refrigerator!
