Super Easy Crockpot Creamy Zucchini Soup

Well, we finally found a way for our family to get in a bunch of veggies! 

This soup is so easy it took me 20 minutes to get everything chopped up and put in the crockpot. Three hours later you just blend it up. I had some cream and cheese and dinner is served! Super satisfying and super filling.

Here's the recipe

In the crockpot:

2 tablespoons butter

1 small yellow onion, diced

4 cups diced red potatoes

5 whole cloves garlic

5 cups zucchini, diced

5 cups chicken broth

1 tablespoon soy sauce

¼ teaspoon dried rosemary

¼ teaspoon dried thyme

¼ teaspoon coriander

¼ teaspoon black pepper

½ teaspoon kosher salt

⅛ - ¼ teaspoon red pepper flakes

Crock pot on high for 3-4 hours

Blend until smooth

Stir in:

1 cup heavy cream

1 ½ shredded cup cheddar cheese

Drizzle with olive oil.

Sprinkle on some Parmesan cheese.

Enjoy with a good bread.
