THE Baked Cheese Tortellini
My youngest loves tortellini so we always have it on hand. I've seen people do a lot of different recipes with tortellini, but I wanted to do my own version of a baked tortellini.
Oh my gosh this is so good.
You have to try this.

Ingredients
24 oz package of fresh cheese tortellini - cooked
1 lb Jimmy Dean Sausage Roll - crumbled and cooked
1 onion, diced
4 cloves of garlic minced
1 jar of your favorite marinara
one 6 oz can tomato paste
3 tablespoons olive oil
2/3 cup of ricotta
2 cups parmesan cheese, grated
3 cups grated mozzarella cheese
1 tablespoon dried basil
½ teaspoon pepper
3/4 cup of reserved pasta water
Preheat the oven to 350°
Assembly:
Boil the tortellini according to the package instructions
In a separate pan, brown the sausage, and then add in the garlic and onion, and cook until translucent.
Mix in the marinara sauce and tomato paste
Add ¾ cup of the pasta water in as well
Coat the baking dish with the olive oil
Then add the tortellini, spoon half of the marinara mixture, then a layer of ricotta and half of the other cheeses, then do another layer of the marinara mixture and top with the remainder of the parmesan and mozzarella, as well as the basil flakes and the pepper.
Pop in the oven for 45 to 60 minutes at 350°.
If you'd like it browned on top, just put it in the broiler for about a minute.
