Tomato Basil Chicken & Rice (One Pot Recipe)

Tomato Basil Chicken & Rice


This was a new dish for me! I wanted to try the rice with tomato-basil flavors and it was so good!

Ingredients:


2 lbs chicken breasts or thighs

3 tablespoons olive oil

1 tablespoon butter

1 yellow onion, diced

3 cloves fresh garlic, chopped 

2 cups uncooked white rice

3 tablespoons tomato paste

1 can diced tomatoes

4 cups chicken stock

1 teaspoon chicken base

½ teaspoon each kosher salt & pepper (to sprinkle on chicken)

1 tablespoon dried parsley

¼ teaspoon dried thyme

¼ teaspoon granulated garlic

1 cup heavy cream

3 tablespoon fresh basil


Directions:

  • Preheat oven to 400°

  • In a Dutch oven on the stove at medium high heat add, the olive oil, butter, diced onion, and garlic. 

  • Sauté it for a minute or two, and then add in your chicken, sprinkled with salt and pepper, skin side down if you are doing chicken with skin.

  •  Let the chicken brown and then flip it over and brown on the other side. then set the chicken inside. 

  • Pour into the pan: uncooked rice, tomato paste and mix it all together.

  • Next, add in the chicken broth and chicken base then bring it to a rolling boil, making sure to not let the rice stick to the bottom.

  •  Place the chicken skin side up in with the rice mixture.

  • Bake at 400° for 30 minutes until rice and chicken are fully cooked.

  • Remove from oven, add cream, fresh basil and mix in gently. 

  • Serve with some crusty bread and even a side salad.
