Tomato Basil Chicken & Rice
This was a new dish for me! I wanted to try the rice with tomato-basil flavors and it was so good!

Ingredients:
2 lbs chicken breasts or thighs
3 tablespoons olive oil
1 tablespoon butter
1 yellow onion, diced
3 cloves fresh garlic, chopped
2 cups uncooked white rice
3 tablespoons tomato paste
1 can diced tomatoes
4 cups chicken stock
1 teaspoon chicken base
½ teaspoon each kosher salt & pepper (to sprinkle on chicken)
1 tablespoon dried parsley
¼ teaspoon dried thyme
¼ teaspoon granulated garlic
1 cup heavy cream
3 tablespoon fresh basil
Directions:
Preheat oven to 400°
In a Dutch oven on the stove at medium high heat add, the olive oil, butter, diced onion, and garlic.
Sauté it for a minute or two, and then add in your chicken, sprinkled with salt and pepper, skin side down if you are doing chicken with skin.
Let the chicken brown and then flip it over and brown on the other side. then set the chicken inside.
Pour into the pan: uncooked rice, tomato paste and mix it all together.
Next, add in the chicken broth and chicken base then bring it to a rolling boil, making sure to not let the rice stick to the bottom.
Place the chicken skin side up in with the rice mixture.
Bake at 400° for 30 minutes until rice and chicken are fully cooked.
Remove from oven, add cream, fresh basil and mix in gently.
Serve with some crusty bread and even a side salad.
