Winston's Weekday Marinated Grilled chicken Dinner!
This dish started with me trying out a new marinade recipe. This one is peppery with a touch of salty and sweet with some tasty umami from the soy sauce. It evolved when I realized the marinade smelled so good and I could make a sauce with the pan juices! I served it with buttery boiled baby potatoes and some beautiful peas for color.
This was very easy, fast and restaurant worthy (according to my family). 😎Â
Here's the full recipe:

Marinade:
¼ cup olive oil extra virgin
¼ cup soy sauce
¼ cup orange juice
1 tablespoon dijon mustard
1 teaspoon garlic powder
1 teaspoon black pepper
¼ teaspoon paprika
1 tablespoon white wine vinegar
1 tablespoon kosher salt
Whisk thoroughly, and then add in:
2 pounds thinly fileted chicken breasts.Â
Place covered in the fridge for at least one hours.
Grill chicken breasts in a pan until internal temp is 160° and then set aside but keep warm.
Sauce:
Add to chicken pan:
Remaining marinade
1 cup sliced brown mushrooms
½ sliced red or yellow onion
Sauté until tender then deglaze the pan with: Â
1 cup chicken stock
Then whisk in:
½ cup heavy cream
1 tablespoon butter
Serve chicken over boiled baby potatoes & peas then top with sauce. Enjoy
